Three balls the size of an orange, yuca and meat inside, breadcrumbs outside, a white sauce dip and a few salad leaves alongside.
Yuca is a root that does in Colombia what the potato does at home: it is boiled, fried, baked and ground. For a croquette it is boiled, mashed, moulded around the filling and deep fried. The filling is usually minced meat, cheese, or both.
The taste is milder than I expected: yuca is not floury like a potato but sweeter and denser, and it forms a shell around the meat that stays soft.
It is not cheap food. In Provenza a portion of three cost almost thirty thousand pesos, which in Medellín is the price of a full two course lunch. At a market or in a place where locals eat, this is a snack for a few thousand.
I had it with wine as a starter and it was the best thing of the evening.
Praktická poznámkaIn Provenza it is a thirty thousand peso starter. At a market or a local canteen the same thing costs a few thousand.
