Rice cooked in milk with cinnamon and sugar, thick, and above all served hot.
That is the first surprise. Rice pudding in Europe is usually eaten cold or lukewarm; here it arrives hot enough that you have to eat it slowly, and therefore for a long time.
The second surprise sits on the side plate: a slice of quesito, fresh unsalted cheese. With a sweet dessert it sounds like a mistake and it is exactly the opposite. Arroz con leche is very sweet and the cheese balances it; one piece to every two spoonfuls and suddenly it makes sense.
There is nothing exclusive about it, it is made at home and costs almost nothing. Anyone invited to visit should expect it as the finish.
Praktická poznámkaThe cheese on the side is not a garnish, it belongs with it. Take a piece of cheese to every two spoonfuls.
